Healthy Apple Craisin Crumble

Ingredients

Apple Mixture:crumble

  • 3 thinly sliced apples
  • 2 tbsp lemon juice
  • 2 tbsp agave nectar
  • 2 tbsp almond milk
  • 1 tbsp cinnamon
  • 1/4 cup craisins
  • Crumble Topping:

  • 2 tbsp flaxseeds
  • 1 tbsp brown sugar
  • 1 tbsp cinnamon
  • 1/2 cup oats (plus some for sprinkling on top)
  • 3 tbsp melted coconut oil
  • 3 tbsp almond milk
  1. Core and cut the apples into 1/4 inch slices, and then cut the slices into small squares, about 1/2 inch by 1/2 inch. Set aside.
  2. Mix together lemon juice, agave nectar, almond milk and cinnamon in a medium bowl. Add apples slices into the mixture, stirring to coat the apples evenly. Pour the coated apples into a 9 by 12 in baking pan.
  3. To prepare topping, grind flaxseed in a food processor until it’s grainy, and no longer resembles seeds. Add in 1/2 cup of oatmeal (reserving some oats for your finishing touches!), brown sugar, and cinnamon and blend well in food processor.
  4. Melt coconut oil in the microwave until liquid. Stir coconut oil and almond milk into your dry topping ingredients, ensuring that the oat mixture is wet.
  5. Pour crumble topping over your apples. Sprinkle a few oats on the top.
  6. Bake at 400 degrees for 25 minutes.

For a breakfast-y take, serve warm with milk poured over.

For dessert, serve warm with ice cream on the side.
