My friend Amy and I tried out this Rachel Ray a few weekends ago. It served as the perfect sweet follow up to the hearty beef stew we made on that snowy (yes, snowy!) autumn day. Super simple to make, few ingredients needed (always a good thing in a snow storm when you can’t run to the store), and it even seems healthy–hey! sweet potatoes are a vegetable! Next time I try this recipe I think I am going to spice up the crust by adding some cinnamon, or maybe even pumpkin pie spice.
